At Mien by First Pasta at Bukit Timah Market & Food Centre, you can be assured not only of value-for-money pasta dishes, but some rather tasty ones to boot. Owner-chef James Tan started out as an engineer in Germany and honed his culinary skills there, where his ex in-laws were running a restaurant. When he returned to Singapore in 2000, he set up shop on Beach Road, closing it two years later to go back to engineering. In 2005, James made another U-turn and opened his current stall at Bukit Timah. James opted to become a hawker because he wanted to "be his own boss". The satisfaction, he said, comes from customers saying: "Thanks for the good lunch". The price he charges for the pasta, which uses freshly-made sauces, would make you happy - $3.90 each - "because it's easier to count with standardized pricing".
